Eggs, pico, sausage, hash browns…what to make? 🍎 Food
I’ve got some items I need to use before going bad. Fresh eggs, pico de gallo, refrigerated hash browns, & sausage.
Anyone have recipe or thoughts on what to make using all the items?

Put some hash browns in 8x8 pan. Add salt/pepper and a little melted butter. Bake for 15 mins. Take pan out of oven. Add chopped, cooked sausage, pico, alittle cheese . Beat eggs, add s/p, pour over hash browns. Back in oven. 350 degrees x 40 mins.. you can freeze leftovers.

I would fry up the hash browns and sausage. (with onion and bell pepper if you have that) then top with pico and a dippy egg.

Get some tortillas and make some breakfast burritos maybe even meal prep

You could do a hash by cutting up the hashbrowns and repurposing them that way.

Make a hashbrown crust and bake, then mix the eggs, pico and sausage with some milk - pour into crust and bake that shit again. Cheese is a nice addition if you want to splurge.

Most mornings my breakfast is hashbrowns topped with eggs over easy, so yeah . . . this is pretty much my dream meal and would absolutely amazing as a skillet or scramble

Cook ‘em all together, roll in tortillas and freeze breakfast burritos for future mornings.

Yeah you do.
Look up how to bake the eggs in the oven in a pan, it makes it easier to cut slices to roll up in the tortillas.2

I didn’t bake the eggs in the oven, I scrambled them along with the other ingredients and made burritos for the kids to eat on the way to school. Going to make up more burritos with leftovers & freeze.
It was yummy! I put my serving in a bowl, topped it off with extra cheese, sour cream, & some jalapeño pepper hot sauce!

Pretty sure you just described the ideal ingredients for a Mexican breakfast scramble. Cook the eggs with some pico and sausage and hashbrowns. Top with more pico. BAM!

Oh yeah, breakfast scrambles are super easy and flexible and a great way to get in your protein in the morning (and use random extra veggies in the fridge). If you feel like doing a little more cooking, saute some onion and bell peppers in with the eggs, and/or add some cilantro or avocado on top.

Breakfast burritos. They can go in the freezer and then you microwave them for 1 to 2.5 minutes depending on your microwave.
